  • 1 cup cooked quinoa Well-cooked and cooled
  • 1 cup dark chocolate chips Look for at least 70% cocoa
  • 1/4 cup coconut flakes Unsweetened

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a microwave-safe bowl, melt the dark chocolate chips, stirring every 30 seconds until smooth.
  • In a large mixing bowl, combine the cooked quinoa and coconut flakes. Pour the melted chocolate over and stir until well coated.
  • Drop small clusters of the mixture onto the prepared baking sheet, leaving space between each cluster.

Baking

  • Bake in the preheated oven for about 10-12 minutes, until the clusters have set and the edges are slightly crispy.
  • Remove from the oven and let cool completely before enjoying.
