30-Minute Beef Stir Fry

Ingredients
  

For the stir fry

  • 1 pound lean beef (such as flank or sirloin), thinly sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil divided
  • 1 cup broccoli florets
  • 1 cup snap peas or green beans
  • 1 bell pepper sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • cooked rice or noodles, for serving
  • sesame seeds and green onions for garnish (optional)

Instructions
 

Preparation

  • Marinate the beef by combining the thinly sliced beef with cornstarch and a tablespoon of soy sauce in a bowl. Mix well and let it sit for about 10 minutes.
  • Prepare the vegetables by slicing the bell pepper and onion, and chopping the broccoli and snap peas.

Cooking

  • Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef in a single layer and cook for about 2-3 minutes until browned. Stir occasionally.
  • Remove the beef from the pan and keep warm while cooking the vegetables.
  • In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic and ginger; cook for about 30 seconds until fragrant.
  • Toss in the sliced onion and bell pepper, stir-frying for 2 minutes before adding the broccoli and snap peas. Continue cooking for another 3-4 minutes until the vegetables are tender but crisp.
  • Return the cooked beef to the pan. Pour in the remaining soy sauce and oyster sauce if using, mixing well to coat.
  • Drizzle with sesame oil and mix until heated through, about 1-2 more minutes.

Notes

For the tenderest beef, slice it against the grain. Ensure the pan is hot enough before adding the beef. Work in batches if necessary to avoid steaming.
