Preparation

  • Peel and dice the large potatoes into uniform chunks.
  • Slice the yellow onion thinly.

Cooking

  • In a large pot, place the diced potatoes, sliced onion, and pour in the vegetable broth.
  • Turn the heat to medium-high and bring the mixture to a boil.
  • Once boiling, reduce the heat to low and let it simmer uncovered for about 20 to 25 minutes.

Blending

  • After the potatoes are fork-tender, use an immersion blender to puree the soup until desired consistency is reached.
