Ingredients
  

Wet Ingredients

  • 2 large bananas About 1 cup or 180g when mashed
  • 1/3 cup vegetable oil or melted butter/coconut oil Use any type of oil of your choice
  • 2 large eggs
  • 1 tsp vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar or soft light brown sugar
  • 1.5 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 tbsp turbinado sugar or demerara sugar For added sweetness and crunch

Instructions
 

Preparation

  • Peel the bananas and chop them into smaller pieces. Mash them in a mixing bowl until smooth.
  • Add the vegetable oil (or melted butter/coconut oil), eggs, and vanilla extract to the mashed bananas. Mix until well combined.
  • Stir in the sugar until fully blended.
  • Fold in the flour, baking powder, and cinnamon until just combined, being careful not to overmix.
  • Preheat your air fryer to 320°F (160°C).
  • Prepare a loaf pan by lining it with parchment paper and lightly greasing it.
  • Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the turbinado sugar on top.

Baking

  • Place the loaf pan in the preheated air fryer and bake for 40-45 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean or with a few crumbs.

Serving

  • Allow the banana bread to cool on a wire rack after baking.
  • Once cooled, slice and enjoy with butter or honey, or pair with your favorite hot beverage.

Notes

Store banana bread at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
