Ingredients
  

For the Chicken and Vegetables

  • 4 pieces boneless, skinless chicken breasts Pat dry and cut into bite-sized pieces if preferred.
  • 2 cups broccoli florets
  • 2 cups bell peppers (any color), sliced
  • 1 cup carrots, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions
 

Preparation

  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • While it heats up, pat the chicken dry with paper towels and cut it into bite-sized pieces if preferred.
  • In a large mixing bowl, combine the chicken, broccoli, bell peppers, and carrots.
  • Drizzle the olive oil over the mixture and sprinkle the garlic powder, onion powder, paprika, salt, and pepper. Toss everything together until evenly coated.

Cooking

  • Place the mixture in the air fryer basket, arranging it in a single layer for even cooking. You may need to do this in batches.
  • Cook the mixture in the air fryer for 10-15 minutes, shaking the basket halfway through.
  • Ensure the chicken reaches an internal temperature of 165°F (75°C).
  • Once cooked, remove the basket from the air fryer and let it rest for a few minutes.
  • Garnish with fresh herbs if desired and serve.

Notes
