Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced

Seasoning and Oil

  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • to taste salt
  • to taste black pepper

For Serving

  • Tortillas
  • Optional toppings: avocado, salsa, sour cream, cilantro

Instructions
 

Preparation

  • Slice the chicken breast into thin strips.
  • In a large bowl, combine the sliced chicken, bell peppers, and onion.
  • Drizzle the olive oil over the mixture and sprinkle the taco seasoning, salt, and black pepper.
  • Toss everything together until well-coated.

Cooking

  • Preheat your air fryer to 400°F (200°C).
  • Once preheated, place the chicken and vegetables in the air fryer basket, ensuring they are spread out evenly.
  • Cook for 10-12 minutes, shaking the basket halfway through.
  • Check the internal temperature of the chicken; it should reach 165°F (75°C).

Serving

  • Remove from the air fryer and let it rest for a couple of minutes.
  • Warm the tortillas in a dry skillet or directly in the air fryer for about 1-2 minutes before serving.
  • Serve hot with your choice of toppings.
