Instructions
Preheat your air fryer to 400°F.
If using a larger chicken breast, split it to create two thinner pieces.
Pat the chicken dry with paper towels.
In a shallow dish, whisk together the eggs.
In another dish, combine Panko bread crumbs, ¼ cup Parmesan cheese, Italian seasoning, salt, paprika, and black pepper.
Dip each piece of chicken into the egg mixture, then coat with the Panko mixture, pressing down to adhere.
Spray the air fryer basket with non-aerosol cooking spray.
Lightly spray the chicken pieces with oil spray before placing them in the air fryer.
Cook the chicken for about 5 minutes on each side until golden brown.
Top each piece with tomato sauce and mozzarella cheese. Cook for an additional 2 minutes until the cheese melts.
Check that the internal temperature of the chicken reaches 165°F before serving.
