This healthier twist on Chicken Parmesan features crispy chicken breasts topped with mozzarella and marinara, all made in the air fryer for a quick and satisfying meal.

Ingredients
  

  • 1 boneless skinless chicken breast (or two smaller breasts)
  • 2 large eggs
  • ¾ cup Panko bread crumbs
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon grated Parmesan cheese (for topping)
  • ½ teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ cup seasoned tomato sauce
  • ½ cup shredded mozzarella cheese

Instructions
 

  • Preheat your air fryer to 400°F.
  • If using a larger chicken breast, split it to create two thinner pieces.
  • Pat the chicken dry with paper towels.
  • In a shallow dish, whisk together the eggs.
  • In another dish, combine Panko bread crumbs, ¼ cup Parmesan cheese, Italian seasoning, salt, paprika, and black pepper.
  • Dip each piece of chicken into the egg mixture, then coat with the Panko mixture, pressing down to adhere.
  • Spray the air fryer basket with non-aerosol cooking spray.
  • Lightly spray the chicken pieces with oil spray before placing them in the air fryer.
  • Cook the chicken for about 5 minutes on each side until golden brown.
  • Top each piece with tomato sauce and mozzarella cheese. Cook for an additional 2 minutes until the cheese melts.
  • Check that the internal temperature of the chicken reaches 165°F before serving.
