Ingredients
  

Dough Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 1 teaspoon salt

Filling Ingredients

  • 1 cup mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 small onion, finely chopped
  • 2 tablespoons vegetable oil 1 tablespoon for cooking onion, 1 tablespoon for brushing pierogies

Serving Suggestions

  • Sour cream (for serving, optional)
  • Fresh chives or parsley (for garnish, optional)

Instructions
 

Preparation of Dough

  • In a large mixing bowl, combine flour and salt. Make a well in the center and add the egg and water.
  • Mix until the dough comes together, then knead on a floured surface for about 5 minutes, or until smooth.
  • Cover the dough with a towel and let it rest for 30 minutes.

Preparation of Filling

  • In a skillet, heat 1 tablespoon of oil over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the mashed potatoes and cheese until everything is well mixed. Season with salt and pepper to taste. Set the filling aside to cool.

Assembly of Pierogies

  • After the dough has rested, roll it out on a lightly floured surface to about 1/8-inch thickness.
  • Use a round cutter or a glass to cut out circles of dough, approximately 3 inches in diameter.
  • Place about a tablespoon of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape.
  • Press the edges together to seal, ensuring there are no air pockets.

Cooking in Air Fryer

  • Preheat your air fryer to 375°F (190°C).
  • Lightly brush the pierogies with the remaining vegetable oil to help achieve a crispy texture.
  • Arrange the pierogies in a single layer in the air fryer basket, ensuring they don’t touch each other.
  • Cook for 10-12 minutes, flipping halfway through, until they turn golden brown and crispy.
  • Once done, remove the pierogies and serve warm with sour cream and chopped chives or parsley, if desired.

Notes

For best results, ensure the dough is rolled out evenly and practice crimping the edges tightly to prevent filling from leaking. You can experiment with different fillings or use store-bought pierogies.
