  • 2 medium medium-sized zucchini
  • 2 medium medium-sized yellow squash
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • optional Fresh herbs for garnish

Preparation

  • Start by washing your zucchini and yellow squash under cool running water. Pat them dry with a clean towel.
  • Slice the squash into even rounds, about half an inch thick for even cooking.
  • In a large mixing bowl, combine the sliced squash with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Cooking

  • Place the seasoned squash slices in the air fryer basket in a single layer, making sure not to overcrowd. You may need to do this in batches.
  • Cook the squash at 375°F (190°C) for 10 to 12 minutes, shaking the basket halfway through.
  • Once golden brown and crispy, remove from the air fryer and repeat with remaining squash.

Serving

  • Garnish with fresh herbs if desired before serving.
