Air Fryer Stuffed Peppers

Ingredients
  

For the Filling

  • 1 cup cooked rice (white, brown, or wild) Cook rice according to package instructions.
  • 1 cup cooked ground turkey or chicken Any cooked meat can be used.
  • 1 can black beans, drained and rinsed (15 oz) Canned or cooked beans can be used.
  • 1 cup corn kernels (fresh, frozen, or canned) Choose your preferred type of corn.
  • 1 cup diced tomatoes (fresh or canned) Use diced tomatoes for added moisture.
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice) Choose cheese based on preference.
  • 1 tablespoon olive oil Use for improved flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • optional Fresh cilantro or parsley for garnish Adds freshness to the dish.

For the Peppers

  • 4 large bell peppers, any color Choose ripe, firm peppers.

Instructions
 

Preparation

  • Cut the tops off each pepper and remove the seeds and ribs. Set them aside.
  • In a large bowl, combine the cooked rice, cooked ground turkey or chicken, black beans, corn, diced tomatoes, half of the cheese, olive oil, garlic powder, onion powder, cumin, salt, and pepper. Mix well until all ingredients are evenly combined.
  • Stuff each bell pepper with the filling mixture, pressing it down gently to pack it in. Leave a little space at the top for expansion during cooking.

Cooking

  • Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  • Arrange the stuffed peppers in the air fryer basket, standing them upright. If needed, secure them with toothpicks.
  • Air fry the stuffed peppers for 12-15 minutes or until the peppers are tender and slightly charred.
  • During the last 3 minutes of cooking, sprinkle the remaining cheese on top of the peppers. Close the air fryer and let the cheese melt.
  • Once done, remove the peppers from the air fryer and allow them to cool slightly before serving.

Serving

  • Garnish with fresh cilantro or parsley if desired before serving.

Notes

Serve with a salad, cut in half for appetizers, or personalize with sauces. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
