Air Fryer Stuffed Peppers

Ingredients
  

For the Peppers

  • 4 large bell peppers (any color) Choose firm and unblemished peppers for best results.
  • 1 cup cooked rice (brown, white, or wild)
  • 1 cup ground turkey or chicken Can substitute with any preferred protein.
  • 1 can black beans, drained and rinsed 15 ounces
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat your air fryer to 370°F (190°C).
  • Slice the tops off the bell peppers and remove the seeds and membranes. Set the peppers aside.
  • In a large bowl, combine the cooked rice, ground turkey or chicken, black beans, corn, diced tomatoes, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix everything well until evenly combined.
  • Stuff each bell pepper with the mixture, pressing down lightly to pack it in.
  • Place the stuffed peppers upright in the air fryer basket. If needed, use a small piece of aluminum foil to help stabilize them.
  • Cook the peppers in the air fryer for about 12–15 minutes until the peppers are tender and the filling is heated through.
  • During the last few minutes of cooking, sprinkle shredded cheese on top of each pepper and let it melt.
  • Once done, carefully remove the peppers from the air fryer and let them cool slightly before serving.

Notes

Serve with a side salad dressed in olive oil and lemon, or whole-grain bread. Optional sides include guacamole or salsa for added flavor. Can also pair with a light soup like tomato or vegetable.
