Ingredients
  

For the Marinade

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar Brown sugar enhances the sweetness of the glaze.
  • 2 tablespoons rice vinegar Rice vinegar adds a nice tang.
  • 1 tablespoon sesame oil Sesame oil gives it a nutty flavor.
  • 2 cloves garlic, minced Fresh garlic is best for flavor.
  • 1 teaspoon fresh ginger, grated Use fresh ginger for a more intense flavor.

For the Chicken

  • 1.5 pounds boneless, skinless chicken thighs or breasts Thighs are preferred for juiciness.
  • 2 tablespoons cornstarch Helps create a crispy exterior.
  • 2 tablespoons water Used to make the cornstarch slurry.
  • Sesame seeds (for garnish)
  • Green onions, chopped (for garnish)

Instructions
 

Preparing the Marinade

  • In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger until the sugar dissolves to create the teriyaki sauce.
  • Place chicken in a resealable plastic bag or shallow dish, pour half of the teriyaki sauce over the chicken, ensuring it is well-coated; reserve other half for later.
  • Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

Cooking the Chicken

  • Preheat air fryer to 400°F (200°C).
  • Remove chicken from marinade and let excess drip off. Pat dry with a paper towel.
  • Mix cornstarch and water in a small bowl to create a slurry. Brush over each chicken piece.
  • Place chicken in a single layer in the air fryer basket.
  • Cook for 12 to 15 minutes, turning halfway through, until chicken reaches an internal temperature of 165°F (75°C).
  • Remove chicken from air fryer and brush with reserved teriyaki sauce before serving.
  • Let chicken rest for a few minutes before slicing.

Notes

Marinating the chicken for as long as possible enhances flavor. Avoid overcrowding the air fryer basket for even cooking. Use a meat thermometer to check doneness.
