  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

  • Grated Parmesan cheese for topping
  • Fresh herbs for garnishing

Preparation

  • Start by washing and drying the zucchini. Cut off both ends and slice them into coins or sticks, depending on your preference for size and shape.
  • In a bowl, combine the zucchini pieces with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until all the zucchini is evenly coated.
  • Preheat your air fryer to 400°F (200°C).

Cooking

  • Place the zucchini in the air fryer basket in a single layer. It’s okay if they overlap a little, but avoid overcrowding for the best results.
  • Cook for about 10-12 minutes, shaking the basket halfway through. You want the zucchini to be golden brown and crispy.
  • If you choose, sprinkle some grated Parmesan cheese on top during the last 2 minutes of cooking for added flavor.
  • Once finished, carefully remove the zucchini from the air fryer. Serve immediately with fresh herbs as a garnish, if desired.

Notes

To store leftovers, let the cooked zucchini cool completely, then transfer to an airtight container. It can stay fresh in the refrigerator for up to 3 days. Reheat in the air fryer for best results.
