Main ingredients

  • 1 cup almond butter Use natural almond butter for best flavor.
  • 1 cup brown sugar
  • 1 large egg Can substitute with a flax egg for vegan option.
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Optional add-ins

  • 1 cup chocolate chips or chopped nuts For added texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the almond butter and brown sugar until smooth.
  • Add the egg, baking soda, salt, and vanilla extract to the almond butter mixture. Stir until fully incorporated.
  • If using, gently fold in the chocolate chips or chopped nuts.

Baking

  • Use a tablespoon to scoop the dough onto the prepared baking sheet, leaving space between each mound.
  • Flatten each cookie slightly with the back of a fork or your fingers for even baking.
  • Bake in the preheated oven for 10-12 minutes, or until the edges turn golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
