  • 2 cups almond flour
  • 1 cup granulated sugar
  • 3 large egg whites (room temperature) Making sure the egg whites are at room temperature will help them whip better.
  • 1 cup powdered sugar (for dusting) This is used for dusting before serving.
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 1/4 cup sliced almonds (optional) For topping, adds extra crunch.

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, combine the almond flour, granulated sugar, and salt; stir until well blended.
  • Add vanilla extract and almond extract, mix well.
  • In a separate bowl, whip the egg whites until soft peaks form.
  • Gently fold the whipped egg whites into the almond mixture without over-mixing.
  • Drop rounded portions of the dough onto the prepared baking sheets about two inches apart.
  • If desired, sprinkle sliced almonds on top of each cookie mound.
  • Bake for 15 to 18 minutes until edges turn lightly golden while centers remain soft.
  • Cool the cookies on the baking sheets for a few minutes before transferring them to a wire rack.
  • Dust with powdered sugar before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a single layer in a freezer-safe container.
