Almond Croissant Cookies
These almond croissant cookies combine the rich, buttery flavor of traditional almond croissants with the delightful texture of cookies, making them perfect for any occasion.
Ingredients
Cookie Dough
- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup unsalted butter, softened Make sure it's at room temperature.
- 1 large egg
- 1 teaspoon almond extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup sliced almonds
- 1 egg white beaten (for brushing) For a nice sheen on the cookies.
Instructions
Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the egg and almond extract to the mixture, then beat until well combined.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a dough forms.
- Fold in the sliced almonds gently until evenly distributed.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about two inches apart.
- Brush the tops of each cookie with the beaten egg white to give them a nice sheen.
Baking
- Bake for 15-18 minutes or until the edges turn golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
