Apple and Brie Stuffed Chicken

Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 2 medium apples (Honeycrisp, Fuji, or Granny Smith)
  • 6 oz brie cheese
  • 3 Tbsp pure maple syrup
  • 2 Tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • to taste salt and black pepper
  • 1 Tbsp olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Slice the apples into thin wedges and cut the brie cheese into small pieces.
  • In a mixing bowl, whisk together the maple syrup, Dijon mustard, minced garlic, and dried thyme.
  • Carefully cut a pocket into each chicken breast and season with salt and black pepper.
  • Heat olive oil in a skillet over medium-high heat and sear the chicken for about 2-3 minutes on each side until golden brown.
  • Stuff each chicken breast with three apple slices and three pieces of brie. Secure with toothpicks if necessary.
  • Brush the tops of the stuffed chicken breasts with the prepared glaze.
  • Transfer the skillet to the oven and bake for 20-22 minutes until the internal temperature reaches 165°F.
  • Allow the chicken to rest for about 5 minutes before serving, garnished with fresh thyme if desired.
