Instructions
Preheat your oven to 400°F (200°C).
Slice the apples into thin wedges and cut the brie cheese into small pieces.
In a mixing bowl, whisk together the maple syrup, Dijon mustard, minced garlic, and dried thyme.
Carefully cut a pocket into each chicken breast and season with salt and black pepper.
Heat olive oil in a skillet over medium-high heat and sear the chicken for about 2-3 minutes on each side until golden brown.
Stuff each chicken breast with three apple slices and three pieces of brie. Secure with toothpicks if necessary.
Brush the tops of the stuffed chicken breasts with the prepared glaze.
Transfer the skillet to the oven and bake for 20-22 minutes until the internal temperature reaches 165°F.
Allow the chicken to rest for about 5 minutes before serving, garnished with fresh thyme if desired.
