Ingredients
  

  • 2 cups finely diced apples (about 2 large apples)
  • 2 cups flour (spelt, white, or oat)
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¾ cup sugar (adjust to taste)
  • 1 cup milk (dairy or plant-based)
  • 3 ½ tablespoons oil or applesauce (for a lighter option)
  • 2 teaspoons pure vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large mixing bowl, combine flour, baking powder, salt, baking soda, cinnamon, and sugar. Stir thoroughly.
  • Create a well in the center of the dry ingredients and add milk, oil (or applesauce), and vanilla extract. Gently fold in the diced apples.
  • Pour the batter into the greased loaf pan and smooth the top with a spatula.
  • Bake for approximately 50 minutes, or until a toothpick inserted comes out mostly clean.
  • Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • For better flavor, cover the cooled bread and let it sit overnight before slicing.
