  • 1 cup apple butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Optional Ingredients

  • 1/2 cup rolled oats Optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the apple butter, egg, and vanilla extract to the butter mixture. Mix until well combined.
  • In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. If including oats, fold them in at this stage.

Baking

  • Using a tablespoon or cookie scoop, drop dollops of dough onto the prepared baking sheet, spacing them about two inches apart.
  • Bake for 10-12 minutes, or until the edges start to turn golden brown. The centers may look slightly underbaked; this is normal.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
