Instructions
Pour the apple cider into a saucepan. Bring to a boil, then reduce to a simmer for 20-30 minutes until reduced by half.
Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan.
In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
Incorporate the dry ingredients: flour, apple pie spice, baking powder, baking soda, and salt until just combined.
Fold in the reduced apple cider until evenly distributed.
Transfer the batter to the prepared loaf pan and bake for about 50 minutes.
Allow the bread to cool for 15 minutes in the pan, then brush with melted butter and sprinkle with cinnamon sugar.
Cool completely before slicing.
