Ingredients
  

  • 2 cups apple cider fresh
  • 1/2 cup butter room temperature
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup melted butter for topping
  • 1/2 cup sugar for topping
  • 1 tablespoon cinnamon for topping

Instructions
 

  • Pour the apple cider into a saucepan. Bring to a boil, then reduce to a simmer for 20-30 minutes until reduced by half.
  • Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan.
  • In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • Incorporate the dry ingredients: flour, apple pie spice, baking powder, baking soda, and salt until just combined.
  • Fold in the reduced apple cider until evenly distributed.
  • Transfer the batter to the prepared loaf pan and bake for about 50 minutes.
  • Allow the bread to cool for 15 minutes in the pan, then brush with melted butter and sprinkle with cinnamon sugar.
  • Cool completely before slicing.

Notes

Feel free to experiment with spices or add nuts and dried fruits for variation.
