  • 1 teaspoon vanilla extract For added flavor.

Dry Ingredients

  • 1/2 cup rolled oats Use quick oats for faster baking.
  • 1/2 cup whole wheat flour Can substitute with gluten-free flour.
  • 1 teaspoon ground cinnamon Can add nutmeg or ginger for a flavor twist.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Mix-ins (optional)

  • 2 medium apples, peeled and diced For sweetness and moisture.
  • 1/2 cup chopped nuts Toasted for enhanced flavor.
  • 1/2 cup raisins or dried cranberries For added sweetness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the cottage cheese, honey or maple syrup, egg, and vanilla extract. Stir until well mixed.
  • In another bowl, whisk together the rolled oats, whole wheat flour, baking powder, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the diced apples, nuts, and raisins or cranberries if using.

Baking

  • Scoop out tablespoon-sized portions of the dough and place them onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 15-18 minutes, or until the cookies are lightly golden around the edges.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
