Ingredients
  

Wet Ingredients

  • 1 cup cottage cheese Can substitute with Greek yogurt or ricotta.
  • 1/2 cup applesauce
  • 1/2 cup brown sugar Can substitute with honey or maple syrup.
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon Adjust according to preference for spice.
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup diced apples About two medium apples. Firm varieties recommended.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  • In a large mixing bowl, combine the cottage cheese, applesauce, brown sugar, and vanilla. Mix until well blended.
  • Add the eggs one at a time, mixing thoroughly after each addition.

Mixing

  • In another bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  • Gradually stir the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  • Fold in the diced apples gently until evenly distributed within the batter.

Baking

  • Scoop the batter into the prepared muffin tin, filling each cup about three-quarters full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes
