rolled oats

cup
vanilla almond milk
or any non-dairy milk

tablespoon
maple syrup
1
tablespoon
chia seeds
1
teaspoon
vanilla extract
1/2

ground cinnamon
1/4
teaspoon
salt
1
tablespoon
butter
or vegan substitute
1
large
apple
peeled, cored, and diced
1/2
teaspoon
ground cinnamon
for the apple mixture

tablespoons
maple syrup
to sweeten apples
1
tablespoon
water
to help cook apples
1
teaspoon
corn starch
to thicken apple mixture
Instructions
In a bowl, combine oats, almond milk, maple syrup, chia seeds, vanilla extract, cinnamon, and salt. Stir well to combine.
Cover and refrigerate overnight (or at least 6 hours).
In the morning, make the apple compote. Melt butter in a saucepan over medium heat.
Add diced apples, cinnamon, and maple syrup. Stir and cook for about 3-5 minutes until apples soften.
In a small bowl, whisk together water and corn starch until smooth. Add to the apple mixture and cook for another 1-2 minutes until thickened.
Remove from heat and let cool slightly.
Serve the overnight oats in a bowl or jar topped with warm apple compote.
