Ingredients
  

Shortbread Base

  • 2 cups all-purpose flour Spoon flour into the measuring cup and level it off.
  • 3/4 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Filling

  • 2 cups apricot preserves or chopped dried apricots
  • 1/4 cup chopped nuts (optional) For added crunch and flavor.
  • 1/2 teaspoon almond extract (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  • In a mixing bowl, combine the softened butter, powdered sugar, and vanilla extract, and cream until light and fluffy, about 2-3 minutes.
  • Gradually add in the flour and salt. Mix until just combined to achieve a crumbly texture.
  • Divide the dough in half and press one half into the bottom of the prepared baking dish.
  • Spread the apricot preserves or chopped dried apricots evenly over the crust.
  • Optional: Sprinkle chopped nuts over the apricot layer.
  • Crumble the remaining dough over the top of the apricots, ensuring some filling is still visible.
  • Bake for 25-30 minutes, or until the top is lightly golden.
  • Allow the bars to cool in the baking dish for at least 30 minutes before cutting into squares.

Notes

For serving, cut into squares and dust with powdered sugar. Serve with whipped cream or vanilla ice cream. Wrap leftover bars in parchment paper for gifting.
