  • 1 cup long-grain white rice Preferably high-quality rice for fluffiness
  • 4 cups milk (whole or 2%) Can mix with half and half or coconut milk for creaminess
  • 1 cup water
  • 1 cup sugar Adjust according to sweetness preference
  • 1 teaspoon vanilla extract
  • 1 stick cinnamon stick For flavoring during cooking
  • 1/2 teaspoon salt
  • Ground cinnamon for garnish Sprinkle just before serving
  • Raisins (optional) Fold in for added sweetness and texture

Instructions
 

Preparation

  • Rinse the rice under cold water until the water runs clear to remove excess starch.
  • In a large saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat.
  • Once boiling, reduce to low, cover, and cook for about 15 minutes or until the rice absorbs the water.

Cooking

  • After the water has been absorbed, add milk, sugar, salt, and the cinnamon stick to the rice. Stir well to combine.
  • Cook the mixture over low heat, stirring regularly to prevent sticking, for about 30-40 minutes until the rice is tender and the pudding thickens.
  • Remove from heat and stir in vanilla extract, then discard the cinnamon stick.
  • If using raisins, fold them in for added sweetness.

Serving

  • Serve warm or chill in the refrigerator until ready. If chilled, stir gently before serving.
