Ingredients
  

Meats

  • 1 lb smoked sausage, sliced
  • 1 lb chicken breasts, diced

Vegetables

  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 3 green onions for garnish

Grains

  • 2 cups long-grain rice

Liquids

  • 4 cups chicken broth Use quality chicken broth for the best flavor.
  • 1 can diced tomatoes (14.5 oz)

Spices

  • 2 tsp Cajun seasoning Adjust to taste.
  • 1 tsp thyme
  • Salt and pepper, to taste

Instructions
 

Preparation

  • Grab a large pot and place it over medium heat.
  • Brown the sliced smoked sausage, then remove and set aside.
  • Add the diced chicken to the pot and brown thoroughly on all sides.

Cooking

  • Sauté the chopped onion, bell pepper, celery, and minced garlic until soft and fragrant.
  • Stir in the long-grain rice and mix well to coat.
  • Pour in the chicken broth and diced tomatoes, mix together, and bring to a boil.
  • Lower the heat and cover the pot, simmering for 20-25 minutes until the rice is tender.
  • Fluff the rice with a fork and return the sausage to the pot. Stir in Cajun seasoning, thyme, salt, and pepper.
  • Serve hot, garnished with fresh green onions.

Notes
