  • 2 pieces chicken breasts, cooked and shredded Boneless, skinless preferred.
  • 4 cups chicken broth Homemade for richer flavor is recommended.
  • 2 cups water
  • 1 cup egg noodles Can substitute with other noodle types.
  • 1 cup bok choy, chopped Replaceable with spinach or kale.
  • 1 piece carrot, sliced
  • 1 piece bell pepper, sliced
  • 3 pieces green onions, chopped For garnish.
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • soy sauce to taste Adjust for preference.
  • salt and pepper to taste
  • sesame oil (optional) For added flavor.
  • fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Gather all ingredients on your countertop.
  • In a large pot, pour the chicken broth and water. Bring to a gentle boil over medium-high heat.
  • Add the cooked and shredded chicken to the pot.
  • Stir in the minced garlic and ginger and cook for 1-2 minutes until fragrant.
  • Add the sliced carrots, bell pepper, and chopped bok choy. Cook for about 5 minutes until tender.
  • Add the egg noodles and cook according to package instructions.
  • Season the soup with soy sauce, salt, and pepper to taste.
  • Optionally drizzle sesame oil over the soup just before serving.
  • Ladle the soup into bowls and garnish with chopped green onions and fresh cilantro.
