Instructions
Heat the olive oil in a large soup pot over medium heat.
Add the Italian sausage and cook until browned, about 5 minutes.
Stir in the diced onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for another 30 seconds.
Add the diced potatoes, chicken broth, salt, black pepper, and dried thyme.
Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
Stir in the heavy cream and cheddar cheese, allowing it to melt for 5 minutes.
Garnish with fresh parsley or green onions before serving.
