  • 1 large ripe avocado about ½ cup mashed
  • 2 large eggs
  • ½ cup brown sugar lightly packed
  • ¼ cup neutral oil avocado or vegetable oil
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon optional

Instructions
 

Preheat the oven

  • Start by preheating your oven to 350°F (175°C). Grease a standard loaf pan and line it with parchment paper for easy removal.

Mash the avocado

  • In a large mixing bowl, scoop out the flesh of the avocado and mash it with a fork until smooth. You should have about ½ cup of mashed avocado.

Mix wet ingredients

  • Add the eggs, brown sugar, oil, and vanilla extract to the mashed avocado. Whisk everything together until smooth and fully combined.

Combine dry ingredients

  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if you’re using it). This helps evenly distribute the leavening agents throughout the bread.

Incorporate the dry ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring gently to combine. Be careful not to overmix—just stir until everything is incorporated for a light, tender texture.

Bake the bread
