Main Ingredients

  • 1 cup cottage cheese
  • 2 large ripe avocados Choose ripe avocados for a creamy texture.
  • 2 large eggs
  • 1.5 cups all-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 0.25 cup olive oil
  • 1 tablespoon honey or maple syrup For sweetness.
  • 1 teaspoon lemon juice For flavor enhancement.
  • 0.5 cup chopped fresh herbs (such as chives or parsley)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or oil.
  • In a medium bowl, mash the ripe avocados using a fork or potato masher until smooth.
  • Add the cottage cheese, eggs, olive oil, honey or maple syrup, and lemon juice to the bowl. Mix well until combined.
  • In a separate large bowl, combine the flour, baking soda, and salt. Stir until blended.
  • Pour the wet mixture into the dry ingredients. Fold gently until just combined. Be careful not to overmix.
  • Gently fold in the chopped herbs. If desired, you can mix in seeds or nuts at this stage.
  • Pour the batter into the prepared loaf pan, spreading it evenly.

Baking

  • Bake in the preheated oven for 45-50 minutes or until golden brown and a toothpick inserted into the center comes out clean.

Cooling

  • Remove from the oven and let the bread cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
