Ingredients
  

Pasta Ingredients

  • 2 cups uncooked dry pasta (any type you prefer)
  • 1 ripe avocado, halved, seeded, and peeled Ensure the avocado is ripe for the best flavor.

Sauce Ingredients

  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan or Romano cheese Substitutable with other cheese types.
  • 1/4 cup fresh basil leaves or cilantro or parsley Choose your preferred herb.
  • 2 cloves garlic
  • 2 tablespoons fresh lemon or lime juice Adjust to taste for acidity.
  • Salt and freshly ground black pepper To taste.

Instructions
 

Cooking the Pasta

  • Boil a large pot of salted water. Add uncooked pasta and cook according to package instructions (usually 8 to 12 minutes).
  • Once the pasta is cooked, drain it in a colander, reserving a bit of the pasta water.

Making the Sauce

  • Scoop the avocado into a blender. Add olive oil, grated cheese, garlic cloves, and fresh herbs.
  • Squeeze in the lemon or lime juice.
  • Blend until desired consistency is achieved.

Combining Pasta and Sauce

  • In a large mixing bowl, toss drained pasta with avocado sauce.
  • If too thick, add reserved pasta water to reach a creamy consistency.
  • Season with salt and black pepper.

Serving

  • Transfer the pasta to plates or bowls. Top with extra grated cheese and serve immediately.

Notes

For best results, use ripe avocados and fresh herbs. Store leftovers in an airtight container for up to 2 days.
