  • 4 medium medium-sized russet potatoes Opt for starchy varieties for best results.
  • 1/4 cup olive oil For a higher smoke point, consider using avocado oil.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup grated Parmesan cheese Add right before finishing baking.
  • Fresh parsley, chopped (for garnish) Adds color and flavor.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly. You can leave the skins on for added texture and nutrients.
  • Cut each potato into wedges, aiming for uniform sizes for even cooking.
  • In a large bowl, combine olive oil, garlic powder, onion powder, dried oregano, paprika, salt, and black pepper. Mix well.
  • Add the potato wedges to the bowl and toss until fully coated.
  • Arrange the wedges in a single layer on a baking sheet lined with parchment paper.

Baking

  • Bake in the preheated oven for about 25 to 30 minutes, turning halfway through.
  • Sprinkle the grated Parmesan cheese over the hot wedges and return to the oven for an additional 3 to 5 minutes.

Serving

  • Garnish with freshly chopped parsley and serve warm.

Notes
