Instructions
Preheat your oven to 375°F (190°C) and grease an 8x8-inch baking pan.
In a medium bowl, mix the rolled oats, baking powder, cinnamon, nutmeg, and salt.
In a large bowl, mash the ripe bananas until smooth.
Add the eggs, almond milk, maple syrup, and vanilla extract to the mashed bananas, whisking until well combined.
Stir in the dry ingredient mixture until combined. If desired, fold in walnuts, chocolate chips, or banana slices.
Pour the mixture into the prepared baking dish and spread evenly.
Bake for 40-45 minutes, or until the top is golden brown and firm to the touch.
Remove from the oven, cool slightly, cut into squares, and serve warm.
