Ingredients
  

  • 2.25 cups rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp salt
  • 1 cup mashed banana (about 2 large or 3 medium)
  • 2 large eggs
  • 1.5 cups unsweetened almond milk
  • 0.25 cup maple syrup
  • 1 tsp vanilla extract
  • 0.5 cup chopped walnuts (optional)
  • 0.5 cup chocolate chips (optional)
  • slices banana for topping (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease an 8x8-inch baking pan.
  • In a medium bowl, mix the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add the eggs, almond milk, maple syrup, and vanilla extract to the mashed bananas, whisking until well combined.
  • Stir in the dry ingredient mixture until combined. If desired, fold in walnuts, chocolate chips, or banana slices.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Bake for 40-45 minutes, or until the top is golden brown and firm to the touch.
  • Remove from the oven, cool slightly, cut into squares, and serve warm.
