Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1 overripe banana the riper, the better for sweetness
  • 2 large eggs
  • 1/2 cup unsweetened almond milk or milk of your choice
  • 2 tablespoons honey or sweetener of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon for warming flavor
  • 1/8 teaspoon salt to enhance sweetness
  • 1/4 cup mini chocolate chips optional, but recommended

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a blender, combine rolled oats, overripe banana, eggs, almond milk, honey, baking powder, vanilla extract, cinnamon, and salt.
  • Blend on high until smooth and creamy, about 30 seconds to 1 minute.
  • Gently fold in mini chocolate chips.
  • Divide the batter evenly among four ramekins, leaving space at the top.
  • Bake in the preheated oven for about 25 minutes, until puffed and golden brown.
  • Let cool for 5 minutes before serving warm.
