Banana Bread Overnight Oats

Ingredients
  

  • 1/2 ripe banana (mashed)
  • 1/2 cup rolled oats (regular or gluten-free)
  • 1/2 cup milk of choice (dairy or non-dairy)
  • 2 tablespoons chopped pecans or walnuts
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • dash sea salt
  • 1 tablespoon ground flaxseed (optional)
  • 2 teaspoons pure maple syrup

Instructions
 

  • Mash the ripe banana and place it at the bottom of a jar or bowl.
  • Add the rolled oats and pour in your choice of milk.
  • Stir in the cinnamon, vanilla extract, sea salt, and maple syrup.
  • Add the chopped nuts and optional flaxseed, mixing everything thoroughly.
  • Cover the jar or bowl and refrigerate for at least 4 hours or overnight.
  • In the morning, stir and enjoy cold or warm in the microwave.
