Ingredients
  

Cookie Base

  • 8 tablespoons butter, softened to room temperature
  • 1/8 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg, room temperature
  • 1/2 cup mashed bananas (about 1 large banana) Ripe bananas recommended for optimal sweetness.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Chocolate Chips

  • 3/4 cup semi-sweet chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a mixer until light and fluffy, about 5 minutes.
  • Add the egg, vanilla extract, and mashed banana, mixing until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually incorporate the dry ingredients into the wet mixture until just combined.
  • Gently fold in the semi-sweet chocolate chips.
  • Line a baking sheet with parchment paper and drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until edges are golden and centers are still slightly underbaked for a chewy texture.
  • Transfer the cookies to a wire rack to cool completely.
