Ingredients
  

  • ½ cup light brown sugar or granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups mashed bananas (from 3-4 very ripe bananas)
  • 1 teaspoon baking soda
  • ¼ teaspoon ground cinnamon (optional)
  • ½ cup melted butter or neutral oil
  • ½ teaspoon kosher salt
  • 1 ½ cups all-purpose flour
  • ¾ cup chopped nuts (your choice and optional)
  • ¼ cup seeds (your choice and optional)
  • ½ cup chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • In a separate bowl, whisk together the mashed bananas, baking soda, butter (or oil), sugar, vanilla extract, eggs, and salt.
  • In another bowl, mix the flour, cinnamon, and nuts (if using).
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
