Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a mixing bowl, mash the ripe bananas until smooth.
In a separate bowl, whisk together the mashed bananas, baking soda, butter (or oil), sugar, vanilla extract, eggs, and salt.
In another bowl, mix the flour, cinnamon, and nuts (if using).
Gradually fold the dry ingredients into the wet mixture until just combined.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
