Ingredients
  

  • 2 cups all-purpose flour sifted
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup salted butter softened
  • 2/3 cup granulated sugar
  • 2 Tbsp. light brown sugar packed
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 2 cups overripe bananas smashed (about 4 bananas)
  • 1/2 cup chopped walnuts optional
  • vegetable shortening for greasing pan

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Mash the bananas in a small bowl until smooth and set aside.
  • In a large bowl, mix together flour, baking soda, and salt.
  • In another bowl, cream together softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the mashed bananas until combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into a greased 9 x 5 loaf pan and distribute evenly.
  • Bake for approximately 60 minutes, or until a toothpick inserted in the center comes out mostly clean.
  • Allow the bread to cool slightly on a cooling rack before slicing.
