In a jar or container, combine rolled oats, almond milk, chia seeds, instant vanilla pudding, and creamy peanut butter. Drizzle in maple syrup to taste.
Secure the lid and shake vigorously until well combined. The mixture should have a creamy consistency.
Gently fold in sliced bananas, or add them in the morning to prevent browning.
Refrigerate overnight or for at least 4-5 hours to allow the oats and chia seeds to soak up the flavors.
In the morning, stir the mixture and top with additional banana slices or chocolate chips if desired.
