Ingredients
  

Dry Ingredients

  • 1 1/4 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt

Wet Ingredients

  • 2 large eggs at room temperature
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsalted butter at room temperature, plus more for preparing the pan
  • 1 cup sugar
  • 3 medium bananas very ripe, peeled and mashed (about 1 cup)
  • 1/2 cup toasted walnut pieces

Instructions
 

  • Preheat oven to 350°F. Butter a 9x5x3-inch loaf pan.
  • Sift together flour, baking soda, and salt. Set aside.
  • Whisk eggs and vanilla extract in a small bowl. Set aside.
  • Cream butter and sugar in a mixer until light and fluffy. Gradually add egg mixture and blend well.
  • Add mashed bananas and mix until fully combined.
  • Fold sifted dry ingredients into wet ingredients gently until just combined.
  • Fold in toasted walnuts carefully to maintain batter texture.
  • Pour batter into prepared loaf pan and bake for about 55 minutes. Insert a toothpick into center; it should come out clean.
  • Cool bread in pan for 5 minutes, then turn out onto wire rack to cool completely.
  • Wrap and let rest overnight for best flavor before serving.

Notes

For variations, add chocolate chips or spices like cinnamon. You can also make muffins instead of bread.
