Instructions
Preheat oven to 350°F. Butter a 9x5x3-inch loaf pan.
Sift together flour, baking soda, and salt. Set aside.
Whisk eggs and vanilla extract in a small bowl. Set aside.
Cream butter and sugar in a mixer until light and fluffy. Gradually add egg mixture and blend well.
Add mashed bananas and mix until fully combined.
Fold sifted dry ingredients into wet ingredients gently until just combined.
Fold in toasted walnuts carefully to maintain batter texture.
Pour batter into prepared loaf pan and bake for about 55 minutes. Insert a toothpick into center; it should come out clean.
Cool bread in pan for 5 minutes, then turn out onto wire rack to cool completely.
Wrap and let rest overnight for best flavor before serving.
Notes
For variations, add chocolate chips or spices like cinnamon. You can also make muffins instead of bread.
