Main Ingredients

  • 2 cups cooked pasta (such as rotini or penne)
  • 2 cups grilled chicken, shredded Leftover grilled chicken works well.
  • 1 cup barbecue sauce Use your favorite barbecue sauce.
  • 1/2 cup ranch dressing Ranch dressing adds creaminess.
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked corn
  • 1/2 cup red onion, diced
  • 1 cup shredded cheese (cheddar or mozzarella) Try pepper jack for a spicy kick.
  • to taste Salt and pepper Adjust according to preference.
  • Fresh cilantro or parsley for garnish

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
  • In a large mixing bowl, combine the cooled pasta with the shredded grilled chicken.
  • Pour in the barbecue sauce and ranch dressing. Stir well to coat the pasta and chicken.

Adding Ingredients

  • Fold in the cherry tomatoes, cooked corn, diced red onion, and shredded cheese.
  • Season the salad with salt and pepper to taste.

Chilling

  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes.

Serving

  • Gently stir before serving. Adjust consistency with added barbecue sauce or ranch if needed.
  • Garnish with chopped cilantro or parsley before serving.

Notes
