  • 2 large sweet potatoes, diced
  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 1 cup barbecue sauce
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup corn (canned or frozen)
  • 2 green onions, chopped (for garnish)
  • Fresh cilantro (for garnish)

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced sweet potatoes, and season with salt, black pepper, and smoked paprika. Cook for about 10-12 minutes, stirring occasionally, until they begin to soften.
  • Push the sweet potatoes to one side of the skillet and add the chopped onion and garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
  • Add the cubed chicken to the skillet. Cook for 5-7 minutes until the chicken pieces are browned and cooked through.
  • Stir in the corn and diced red bell pepper. Pour the barbecue sauce over the mixture and stir until everything is well coated.
  • Reduce the heat to low and cover the skillet. Allow it to simmer for 5-10 minutes, letting the flavors meld together and the sweet potatoes finish cooking.
  • Remove from heat, and garnish with chopped green onions and fresh cilantro before serving.

Notes

For extra tenderness, soak diced sweet potatoes in water for 30 minutes before cooking. Customize the barbecue sauce to your taste and consider adding more vegetables for a nutrient boost.
