  • 1 lb beef flank steak or skirt steak works best
  • 1 tablespoon olive oil
  • 1 onion thinly sliced
  • 2 bell peppers sliced, any color you prefer
  • 2 tablespoons of fajita seasoning
  • 4-6 flour tortillas
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions
 

Prep the Beef

  • Start by slicing your beef into thin strips against the grain. This helps make the meat tender and easy to eat. Season it with salt, pepper, and 1 tablespoon of fajita seasoning. Let it marinate for a few minutes to soak in those flavors.

Cook the Vegetables

  • Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they’re soft and slightly charred. Remove them from the pan and set them aside.

Cook the Beef

  • In the same pan, add the seasoned beef and cook for about 3-4 minutes until it’s browned and cooked through. Make sure not to overcook it to keep the beef tender and juicy. Once the beef is done, return the vegetables to the pan, add the remaining fajita seasoning, and stir everything together. Let it cook for another 2-3 minutes to combine the flavors.

Add the Finishing Touches

  • Squeeze fresh lime juice over the beef and vegetables for a zesty burst of flavor. Give everything a final stir to mix in the lime juice.

Warm the Tortillas

  • While the beef and veggies are cooking, warm the flour tortillas in a dry skillet for about 30 seconds on each side, or microwave them wrapped in a damp paper towel for 20-30 seconds.

Assemble and Serve

  • Once everything is ready, spoon the beef and veggie mixture onto the warm tortillas. Serve immediately and enjoy the sizzling, flavorful fajitas!
