Equipment

  • Large Skillet

Ingredients

  • 1 lb Beef (Flank Steak or Skirt Steak)
  • 3 Bell Peppers 1 each of red, yellow, and green
  • 1 large Onion thinly sliced
  • 2 tbsp Olive Oil
  • 2 cloves Garlic minced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 lime Lime Juice
  • Salt to taste
  • Pepper to taste
  • 8 small Tortillas flour or corn tortillas

Instructions

  • Slice the beef against the grain into thin strips. In a bowl, combine lime juice, garlic, cumin, chili powder, salt, and pepper. Add the beef strips and toss to coat. Let marinate for 20-30 minutes.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions and sauté for 5-7 minutes until tender and slightly charred. Remove from the skillet and set aside.
  • In the same skillet, add another tablespoon of olive oil. Add the marinated beef strips and cook for 4-5 minutes until browned and cooked to your desired doneness. Do not overcook to keep the beef juicy and tender.
  • Add the cooked bell peppers and onions back to the skillet and toss everything together to meld the flavors. Warm tortillas in a dry pan for a few seconds, then assemble with the beef and veggies. Top with desired garnishes like sour cream, guacamole, salsa, or cheese.
