- 2 lbs beef chuck cut into cubes
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup all-purpose flour
- 1 onion diced
- 3 cloves garlic minced
- 3 carrots sliced
- 3 potatoes diced
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp dried thyme
Brown the Beef:
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, then lightly coat them in flour. Add the beef in batches to avoid overcrowding, browning each side for about 3-4 minutes. Once browned, remove the beef and set it aside.
Sauté the Aromatics:
In the same pot, add the diced onion and minced garlic. Cook for 2-3 minutes, stirring occasionally, until they become soft and fragrant.
Build the Stew Base:
Add the tomato paste to the onions and garlic, stirring for 1 minute. This will deepen the flavor. Next, pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pot. These bits add incredible flavor to the stew.
Simmer the Stew:
Return the browned beef to the pot, along with the carrots, potatoes, bay leaves, and thyme. Stir everything together and bring the mixture to a gentle boil. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours or until the beef is tender and the vegetables are cooked through.
