  • 1 tablespoon butter For sautéing
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cups chicken or vegetable broth
  • 1 cup beer (lager or pale ale) Choose a lighter beer for best results
  • 2 cups shredded sharp cheddar cheese Preferably freshly grated
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • to taste salt and pepper For seasoning
  • as needed chives or parsley for garnish Provides a fresh finish

Instructions
 

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 5 to 7 minutes.

Cooking

  • Stir in the diced carrots and celery, sautéing for a few more minutes until softened.
  • Pour the chicken or vegetable broth and beer into the pot, stirring to combine.
  • Bring to a gentle simmer and allow to cook for about 15 minutes.
  • Once the vegetables are tender, gradually add the shredded cheddar cheese, stirring continuously until melted.
  • Stir in the heavy cream and Worcestershire sauce, and season with salt and pepper to taste.
  • Serve hot, garnished with chives or parsley.
