For the Fish

  • 4 fillets orange roughy fillets
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon sliced
  • Fresh parsley, for garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a baking pan with parchment paper or lightly grease it with cooking spray.
  • In a small bowl, mix together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  • Place the orange roughy fillets in the prepared baking dish, and pour the olive oil mixture evenly over the fish.
  • Top each fillet with slices of lemon for added flavor.

Cooking

  • Bake in the preheated oven for 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
  • Remove from the oven and let it rest for a few minutes before serving.
  • Garnish with fresh parsley before serving.
