  • 4 pieces boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped Use fresh roasted peppers for best flavor.
  • 1 cup grated Parmesan cheese Divided into two portions.
  • ½ cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh basil leaves, for garnish (optional) Use fresh for best presentation.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, black pepper, garlic powder, and onion powder.
  • Once the skillet is hot, add the chicken breasts. Sear them for about 5 minutes on each side until they are golden brown. Transfer the chicken to a baking dish.
  • In a mixing bowl, combine the heavy cream, chopped roasted red peppers, dried basil, and half of the Parmesan cheese. Mix well until everything is incorporated.
  • Pour the mixture over the chicken in the baking dish, ensuring each piece is well-coated.
  • Sprinkle the remaining Parmesan cheese on top.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Garnish with fresh basil leaves, if desired, and serve hot.
