Instructions
Peel and chop the carrots, quarter the potatoes, slice the onion, and mince the garlic.
Season the chuck roast generously with salt and pepper on both sides.
Heat a skillet over medium-high heat and add oil. Sear the roast for 3-4 minutes on each side until golden brown.
Place the seared roast in the crock pot and layer with carrots, potatoes, onion, and garlic.
Sprinkle thyme and rosemary over the vegetables and pour beef broth over everything.
Cover and cook on LOW for 8 hours or HIGH for 4 hours.
Check for tenderness; the roast should be fork-tender.
Serve the pot roast with the vegetables and some of the broth spooned over the top.
