Ingredients
  

  • 3 to 4 lbs Chuck Roast
  • 2 cups Low-Sodium Beef Broth
  • 4 large Carrots Chopped
  • 4 medium Yukon Gold Potatoes Quartered
  • 1 large Onion Sliced
  • 4 cloves Garlic Minced
  • 2 teaspoons Fresh Thyme Or 1 tsp dried
  • 2 teaspoons Fresh Rosemary Or 1 tsp dried
  • Salt and Pepper to taste

Instructions
 

  • Peel and chop the carrots, quarter the potatoes, slice the onion, and mince the garlic.
  • Season the chuck roast generously with salt and pepper on both sides.
  • Heat a skillet over medium-high heat and add oil. Sear the roast for 3-4 minutes on each side until golden brown.
  • Place the seared roast in the crock pot and layer with carrots, potatoes, onion, and garlic.
  • Sprinkle thyme and rosemary over the vegetables and pour beef broth over everything.
  • Cover and cook on LOW for 8 hours or HIGH for 4 hours.
  • Check for tenderness; the roast should be fork-tender.
  • Serve the pot roast with the vegetables and some of the broth spooned over the top.
