Ingredients

  • 1 tablespoon cumin Adds warmth and earthiness.
  • 2 leaves bay leaves Enhances the overall flavor.
  • 1/4 cup vinegar (white or apple cider) For acidity in the marinade.
  • salt and pepper to taste Season to enhance flavor.
  • 10 corn tortillas Fresh tortillas preferred.
  • 2 cups shredded cheese (e.g., Oaxaca or Monterey Jack) For filling the tacos.
  • Fresh cilantro, chopped for garnish Adds freshness.
  • 1 onion, diced for garnish Enhances presentation.
  • Water (enough to cover the meat in the crockpot) Essential for cooking the meat.

Instructions
 

Preparation

  • Chop the beef into manageable chunks and place them in the crockpot.
  • Add the chopped onions and minced garlic.
  • Prepare the dried chili peppers by removing stems and seeds, then add them to the crockpot.
  • Add cumin, bay leaves, vinegar, salt, and pepper to the mixture.
  • Pour enough water into the pot to cover the ingredients.

Cooking

  • Set the crockpot to low and cook for about 8 hours until the beef is fork-tender.

Shredding and Serving

  • Remove the beef from the crockpot and shred it using two forks.
  • Blend the cooking liquid until smooth to create the consomé.
  • Heat tortillas in a skillet until warm and pliable.
  • Fill each tortilla with shredded beef and cheese, fold, and fry until crispy and golden brown.
  • Serve the birria tacos with a bowl of consomé and garnishes of diced onion and chopped cilantro.
